Quinoa with Feta and Cilantro

Serves 4


  • 1 cup raw quinoa
  • Juice from 1 lemon
  • 2 tablespoons olive oil
  • 4 ounces feta cheese, crumbled
  • 1 cup cherry tomatoes, halved (or 1 large tomato, chopped)
  • 1/8 cup chopped fresh cilantro
  • 1/8 cup chopped fresh green onions (also called scallions) 
  • Salt and Pepper to taste


Rinse quinoa and cook according to package directions.  Evenly coat warm quinoa with lemon juice and olive oil and season with salt and pepper to taste.  Set aside to cool.   

Once the quinoa is cool, toss with feta, tomatoes, cilantro, and green onions and serve cold.
