Honey Mustard Chicken


1 lb. boneless skinless chicken breasts

1/4 cup olive oil

Juice from 1 lemon

1 tablespoon honey

1 tablespoon dijon mustard

Salt and pepper



Place chicken in a bowl and fully coat in lemon juice and olive oil.  Season with salt and pepper.  Refrigerate 1 hour to marinate.  

Preheat oven to 375.  Remove chicken from the bowl and place on aluminum foil on a baking sheet.  Bake for 20 - 25 minutes or until chicken is fully cooked.  

Mix honey and mustard together in a small bowl.  Brush chicken with honey mustard mixture and sprinkle with salt and pepper.  Bake for 5 more minutes.


  • Use boneless skinless chicken breasts instead of chicken thighs.  Cooking time will vary depending on thickness of chicken breast but typically takes 30 - 40 minutes.
