The Fastest Vinaigrette


  • 1 tsp. dijon mustard
  • 1/4 cup vinegar (such as red or white wine, or balsamic)
  • 3/4 cup extra-virgin olive oil
  • 1/4 tsp. salt
  • 1/8 tsp. freshly ground pepper
  • A touch of honey (optional)


Place all ingredients in a mason jar or tightly sealed container.  Shake vigorously.  Taste the finished vinaigrette and add more salt and pepper, if desired.

Makes about 1 cup.  Store in the refrigerator for 5 days.
