Scrambled Broccoli and Mushrooms

Serves 2

Ingredients

  • 2 cups broccoli, roughly chopped

  • 2 cloves garlic, chopped
  • 4 mushrooms, chopped
  • 4 large eggs, lightly scrambled in a bowl
  • 2 teaspoons coconut oil

Directions

Heat coconut oil in a medium skillet.  Add broccoli, garlic, and mushrooms and cook for 3 - 5 minutes.  Add eggs and scramble until cooked, approximately 5 minutes.
