Roasted Red Pepper Pesto
When your meal needs a little kick, try this roasted red pepper pesto to take things to the next level. Shown here with grilled shrimp, and a big salad.
- 3 roasted red peppers, peeled and seeded (see 4 ways to roast red peppers, here)
- 1/4 cup unsalted almonds
- 1 dried chili pepper or 1 TSP red pepper flakes (to taste)
- 1 TBSP olive oil
- Juice from 1/2 lemon
- 1/2 TSP kosher salt (to taste)
Place all ingredients in a blender and blend until smooth.
Serve on anything and everything or use as a dip for veggies and crackers.
