Pan-Seared Pork Chop
If you're looking for something that's not chicken, not steak, and totally delicious, try these pan-seared pork chops.
- 2 center-cut bone on pork chops
- grapeseed oil
- kosher salt
Sprinkle the pork chops with kosher salt and pepper on both sides.
If you have time (recommended), let them sit in the fridge for 15 minutes - 1 hour. This helps season them from the inside and helps keep them from drying out.
Preheat the oven to 400° and place a cast iron skillet inside to preheat as well.
Remove the pork chops from the fridge, pat them dry and sprinkle both sides with grapeseed oil.
Using oven mitts, remove the skillet from the oven and place it on the stove over medium-high heat.
Place the pork chops on the skillet and sear until golden, about 3 minutes.
Flip and transfer to the oven.
Roast for 5 - 10 minutes or until a thermometer reads 140° - 145° in the thickest part.
Transfer to a plate and let rest for at least 5 minutes before serving.
