Napa Cabbage Slaw
- 1 head napa cabbage, chopped
- 2 large carrots, grated
- 2 scallions, chopped
- 1 TBSP chopped ginger
- 1 TBSP chopped garlic
- 1/4 cup chopped cilantro
- 1 jalapeno or other spicy pepper, sliced (optional)
- 2 TBSP soy sauce (gluten free Tamari if necessary)
- 2 TBSP mirin
- 2 TBSP sesame oil
- 1 large lime, juiced
For the slaw, mix all ingredients together in a large bowl.
For the dressing, add all ingredients to a tightly sealed container or mason jar and shake vigorously.
Add your preferred amount of dressing to the slaw about 10 minutes before serving and let it sit to combine. Add salt and pepper if needed.
