Lentils with Herbs and Spices
- 1 cup green lentils, rinsed
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 scallions, chopped,
- 1/8 cup fresh parsley, chopped
- 2 tablespoons olive oil
- Salt and pepper
Cover lentils with water and bring to a boil in a medium saucepan. Cover, and reduce heat to low. Simmer until lentils are soft, about 20 minutes. Turn off heat and drain any excess water.
Meanwhile, heat olive oil in a pan over medium heat. Add onions and cook, stirring frequently, until soft. Stir in cumin and garlic and cook for another minute.
Add onion mixture, parsley, and scallions to lentils and stir. Add salt and pepper to taste.
