Homemade Turkey Pasta Sauce

Serves 4 

Ingredients

  • 12 ounces whole wheat pasta (3/4 of a box) 
  • 2 tablespoons olive oil 
  • 1 large onion, chopped 
  • 2 carrots, chopped 
  • 2 cloves garlic, finely chopped 
  • 3/4 pound ground turkey 
  • 3/4 teaspoon kosher salt 
  • 1/2 teaspoon black pepper 
  • 1 28-ounce can crushed tomatoes 
  • 1/2 cup fresh flat-leaf parsley, chopped 
  • 2 cups chopped spinach
  • 1/4 cup grated Parmesan (1 ounce) 

Directions

  1. Cook the pasta according to the package directions.
  2. Meanwhile, heat the oil in a saucepan over medium heat. Add the onion, carrots, and garlic and cook, stirring occasionally, until soft, 8 to 10 minutes.
  3. Increase heat to medium-high. Add the turkey, salt, and pepper and cook, breaking up the meat with a spoon, until no longer pink, 8 to 10 minutes.
  4. Add the tomatoes and simmer, stirring occasionally, until sauce slightly thickens, about 5 - 10 minutes. Stir in the parsley and the spinach.
  5. Serve the pasta with the sauce and sprinkle with the Parmesan cheese
