Detox Salad

Serves 2

Ingredients:

  • 2 cups tomatoes, cubed (a variety of heirloom tomatoes pictured here)
  • 1 avocado, cubed
  • 3/4 cup black beans
  • 1/2 lime, juiced
  • 3 radishes, sliced
  • 1 tablespoon olive oil, plus more to taste
  • 1 tablespoon cilantro, chopped
  • 2 large handfuls arugula
  • salt and pepper to taste

Directions:

Mix all ingredients in a large bowl.  Enjoy.
