Cabbage, Carrots, and Peppers, 3 Ways


What can you make with cabbage, carrots, peppers + a few pantry staples?  A lot!

Featured here: napa cabbage, carrots, red bell peppers, scallions (also called green onions), garlic and ginger.


Veggie-stuffed Omelette

Serves 1

Ingredients:  2 tbsp oil (sesame/grapeseed/or olive oil); 1 cup napa cabbage, chopped; 1/4 of a red bell pepper, thinly sliced; 1/2 carrot, thinly sliced; 4 mushrooms, thinly sliced; 1 tbsp chopped scallions; 2 tsp soy sauce; 2 eggs, whisked in a bowl

Directions: Heat 1 tbsp sesame oil in a saucepan.  Add all vegetables and cook for 5 - 10 minutes until soft.  Add soy sauce and cook for another 2 minutes.  Set aside.   Rinse and dry the pan or grab a second omelette pan.  Coat the pan with 1 tbsp oil, add the eggs and let them set until firm on one side. Flip the omelette and cook for another 30 seconds.  Add the vegetables, fold, and enjoy.


Fancy Lettuce Wraps

Serves 2

Ingredients:  4 cups napa cabbage, chopped; 1 red bell pepper, thinly sliced; 2 carrots, thinly sliced; 1 tbsp scallions, chopped; 1 tsp ginger, chopped; 1 tsp garlic, chopped; 2 tbsp sesame oil; 1 lime; 1 head butter lettuce, washed and separated into large leafy pieces; peanuts (to taste); 1 lb cooked chicken, sliced (optional); salt/pepper to taste

Directions:  Place cabbage, peppers, carrots, scallions, ginger, garlic, peanuts and chicken in a large bowl.  Top with sesame oil, salt/pepper, and juice from one lime.  Mix well and serve wrapped in butter lettuce.  


Happy New Year Noodles

Serves 4

Ingredients:  2 tbsp sesame oil; 4 cups napa cabbage, chopped; 1 red bell pepper, thinly sliced; 2 carrots, thinly sliced; 3 tbsp scallions, chopped; 1 tbsp ginger, chopped; 1 tbsp garlic, chopped; 4 cups of any kind of pasta (shown here, brown rice spaghetti); 2 tbsp soy sauce; 1 lime; peanuts (to taste); cooked pork/chicken/beef/shrimp, sliced (optional); salt/pepper to taste

Directions:  Cook pasta according to package directions and set aside.  Heat sesame oil in a large saucepan over medium heat.  Add ginger, garlic and scallions and cook for one minute.  Add cabbage, peppers, and carrots.  Cook for 5 - 10 minutes until the carrots and peppers soften.  Add cooked pasta and mix together.  Add soy sauce and juice from 1 lime and heat for one more minute.  Add peanuts and/or cooked meats/fish and heat until everything is warm.
